This recipe was created for a BBQ on St Herbert’s Island in the middle of Derwentwater
Recipe
4x field mushrooms
200g Blengdale Blue cheese
100g walnuts
1tbsp mustard
50ml of local ale
50g breadcrumbs
3 tbsp Hawkshead Relish/Worcestershire Sauce
Method
Place the field mushrooms on a roasting tray stalk side up, season with salt, pepper and rosemary. Place the mushrooms in the oven for 20 mins until soft. Place the blue cheese, mustard, walnuts, ale and breadcrumbs into a food processor and blend together. Spread the rarebit mix onto the underside of the mushroom and place straight onto the BBQ. Season with a splash of the relish and serve.
