We are on the crest of one of the biggest food revolutions the UK has ever seen and i want to embrace it here in the Lake District. I think it is time we had some new great dishes that are unique to the location.
So i am looking for what i would call Iconic local produce from the North West and the Lake District. I think that we have some of the very best quality raw produce as wells as some great products from around the area. So what i want is for people to contact me by email, stop me in the street or drop in to the cafe or cookery school with what they would like to see labelled as an iconic lakeland product or dish so i can look at how i can create a new breed of classic’s for the North West and the Lake District dish using our very best produce.
To give you an idea: i have taken potted Silloth shrimp and used that dish to create a fantastic rich potted shrimp and saffron risotto
or I have used Cumbrian wild boar and turned it into a great burger flavoured with chilli, coriander and ground up Grasmere Gingerbread to give it a fantastic sweet bite to the burger, all served it in a locally milled floured bread roll from Salkeld watermill and a home made chilli and Egremont Russet apple jam, it a cumbrian tour on a plate !!!!
So please send me your ideas and watch this space for some new iconic classic dishes.

we have loads of brilliant Cumberland sausages, why not
Use them with their spices to make cassoulet.you could use herdwick lamb and possibly duck.to make a delicious hearty winter bean/meat casserole.perfect for winter!!
