Well before you all start asking i thought i would post a recipe pre Christmas for you to use on boxing day
This recipe is Thai Curry paste and its something we have been teaching at our cookery school running up to Christmas
Thai curry paste
Ingredients
2 sticks of lemon grass or 4 strips of lemon peel
3 chilli’s
3 garlic cloves
1 Bunch of spring onions
Fresh coriander
1 tsp ground cumin
1 tsp ground coriander
1 lime the zest of
1 tsp black pepper corns
Fish sauce
1 tsp veg oil
1 tin of coconut milk
For the curry
Cooked turkey
More fresh coriander
A selection of vegetables to stir fry
Method
Fry off the paste in a couple of tea spoons of oil
Slice an onion and add to the paste
Add more sliced chilli’s if you like it hot
Add one tin of coconut milk to the pan and give it a stir
Add 200ml of vegetable or chicken stock
Simmer for 5 mins
Add lots of chopped cooked turkey and warm through for a minute or two
Add lots of freshly chopped coriander and taste for seasoning or maybe a squeeze of lime juice
