Making mozzarella like Gordon Ramsay

Having just watched an episode of Kitchen Nightmares on Channel 4 last friday night,

I thought what a great idea to make your own local mozzarella. I have been researching all weekend and have found some great tips and suppliers in the UK. You need to find yourself some raw milk I called into my local dairy farm and just asked them in return for baking them a yummy cake. I found a great cheese making supplier down in Sumerset www.cheesemakers.co.uk, they were really helpful.

So I have ordered some rennet, PH sticks and a riccotta mould so Kylie can make some lake district riccotta for the deli and cafe.

We collect our raw milk on Friday and we are going to make fresh cheese over the weekend so we will keep you posted and if it works we will upload it onto our podcast page.

    Hi

Thoroughly enjoyed your enlightening talk this afternoon at the CT Memebers Meeting at the Castle Inn Hotel.
You mentioned the blogging, so here I am, looking for results – I’m sure I’ll be hooked now. Particularly want to see more use of local prods.
I am considering making my own potato cakes for our guests’ breakfasts. I currently buy in, but I can use my local Flookburgh Potatoes (Estima) and some of the lovely wild garlic which is fast coming up. I plan to griddle cook the cakes, then freeze for later use throught the season. Any ideas on a recipe? Mine is “intuitivley’ made up – in true chef style, but quite good!
