		<description>hi  i saw that ramsey mozarrella program but didnt see him make it.   wondered if you could share the recipe.  i have goats and make hard cheese and have tried mozarrella and it hasnt worked so would be interested on how he did it. many thanks emma</description>

Thoroughly enjoyed your enlightening talk this afternoon at the CT Memebers Meeting at the Castle Inn Hotel.  
You mentioned the blogging, so here I am, looking for results - I&#039;m sure I&#039;ll be hooked now.  Particularly want to see more use of local prods.  
I am considering making my own potato cakes for our guests&#039; breakfasts.  I currently buy in, but I can use my local Flookburgh Potatoes (Estima) and some of the lovely wild garlic which is fast coming up.  I plan to griddle cook the cakes, then freeze for later use throught the season.  Any ideas on a recipe?  Mine is &quot;intuitivley&#039; made up - in true chef style, but quite good!</description>
