I was out shopping in a local farmers Market and I came across the first of the years duck eggs, I bought two dozen and went straight back to the cafe to put them on special for the day.
It got me thinking how could i utilise these great eggs so i came up with the following
1. Breakfast fritatta
2. Poached eggs with pancetta on toasted muffins
3. Toad in the hole with local cumbrian duck eggs and Jennings Ale gravy
4. Wild garlic and duck egg souffle
5. Baked eggs with anchovi toast
