I have just sat down on the sofa having enjoyed the best meatballs i have ever eaten, in fact so delious i thought i should really share it with you straight away.
To serve 4
8 good quality cumberland sausages
2 white onions
4 cloves of garlic
1/2 a green chilli
2 slices of white bread
2 anchovi fillets
6 olives
2 eggs
1 glass of red wine
3/4 large spoonfuls of tomato sauce (see my recipe on how to make a great easy tomato base sauce)
Method
Chop your onions and garlic finely and place in a frying pan with a splash of olive oil and cook on a gentle heat until soft
Meanwhile place your bread, anchovi and olives into a food processor and blend to a fine bread crumb
Place the bread crumbs and the soften onions into a mixing bowl
Squeeze the meat from the inside of the sausages into the bowl with the bread crumbs
Add the eggs and get your hands in to mix it all together
Using a spoon portion out the meatballs, if you wet your hands it should help when rolling the meat balls
Place the meatball in the oven for about 10 minutes at 160 oc
Add some red wine and a good quality tomato sauce(I made my own tomato sauce every week using tinned tomatoes as we use tomato sauce all the time)and cook for a further 15 minutes, giving you enough time to cook some spaghetti
Serve with some grated parmesan,a few torn basil leaves and a good glass of chianti
