It may have been raining recently but here is a spicy twist on the traditional potato salad to accompany your bbq
Ingredients
- 500gm salad potatoes (cut lengthways)
- 1tsp ground thurmeric
- 2 red chillis deseeded and finely chopped
- 30ml white wine vinegar
- 100ml olive oil
- juice of one lemon
- 1/2 bunch coriander leaves roughly chopped
Here’s how
Boil the potatoes with a pinch of salt in the water, until cooked. While the potatoes are cooking add the lemon juice, turmeric, olive oil and vinegar into a mixing bowl and stir. Then when cooked, drain the potatoes and add to the bowl throw in 1/2 the coriander, clingfilm well then shake to ensure all the potoatoes are covered with the dressing. Unwrap, sprinkle with the remaining coriander and serve.
Chef’s Tip
I like to serve this with some char grilled or BBQ’d monkfish nice and simple !
