Here at the Good Taste bakery with have been playing around with some new bread baking methods.
We have started mixing the bread and leaving it over night, this seems to result in us not needing to knead the bread so much, which is great because that mean we get an extra half hour in bed as it does not take as long to make the bread on a saturday morning. I have also started baking my bread in a le creuset dutch oven, we pre heat the pot in hot oven while the bread dough proves for the second time sat on a sheet of silicon paper, then when it has doubled in size i just simply lift the paper up and place the bread into the pot roast dish, lid on and back into the oven. It works really well as it traps all the moisture inside the pot and help develop a really good crust on the bread.
