Parsnip, chili and parmesan soup Image

This soup is one of the Good Taste cafe customers Favorites

Ingredients

1kg parsnip
1 large white onion chopped roughly
3 cloves of garlic
1 red chili or 1 tsp of dried chili flakes
2 pints of vegetable stock
100g parmesan or the skin of the parmesan cheese
100 ml of double cream 
salt and pepper

Method

Chop the parsnip into 2cm chunks and place in a large sauce pan, followed by the onions, garlic, chili and parmesan
Add the vegetable stock and simmer for 30 mins until the parsnip is tender
Add the cream and using a stick blender, blend the soup until smooth 
Return the pan to the heat and taste the soup for seasoning

We have been serving this soup in the cafe today with a lovely parmesan and rosemary foccacia bread (yummy)

This soup is great to take in a flask to work or even a great big long walk in the countryside
