Roasted garlic bulbs are a fantastic way to give a beautiful punch of sweet garlic flavour to any dish.
Ingredients
6 bulbs of garlicĀ
200ml vegetables oil
4 springs of thyme
4 springs of rosemary
Method
Place the garlic into a small roasting tray
Pour the oil over the garlic
Add the springs of thyme and rosemary
Place the garlic in the oven at 150 oc for one hour until soft, sweet & squidgey
Some ideas for using roasted garlic
Squeeze one whole bulb into a pan with cooked pasta, followed by flat leaf pasley and a squeeze of lemon. finish with lots of black pepper
Fill a chicken breast with whole garlic bulbs in stead of garlic butter, then roll in bread crumbs, it makes a healthier alternative for chicken kiev
Spread a clove of garlic on to a slice of crisp french bread and top with a slice of brie
